Ayate Reposado Tequila
The Ayate is an unique tequila from farm, to distillation and bottling, this stuff stands out. Rosendo Ramirez Senior, has been growing agave in Jalisco for decades, hand selects agave for roasting and eventually distillation. Distillation happens in traditional copper pot stills and then the tequila is transferred into, winemaker, Dave Phinney’s wheelhouse. The Reposado spends 4 months in new American oak barrels and then an additional 4 months in Chardonnay barrels from Dave’s wine projects. This unique finish is perfect. It’s just robust enough to add a great richness, making the tequila supremely sip-able and just delicate enough to preserve all of the hard work in the agave fields and careful distillation.
